Dark Chocolate Seed Bark

These chocolate disks are almost too beautiful to eat. Add a hint of flavour with a mix of spices and seeds sprinkled on these easy-to-make, dark chocolate mendiants, a traditional French confection.

Chocolatier’s Tip

You can experiment with different flavoured discs; for a fruity twist, sprinkle with freeze dried raspberries or take inspiration from the tropics and add a sprinkling of desiccated coconut.

Step 1.

Line two baking sheets with parchment paper.

Step 2.

Put the chopped chocolate into a heat-proof bowl set over a pan of barely simmering water. Stir until smooth and melted.

Step 3.

Pour 1 tbsp rounds of the melted chocolate, spaced apart, onto the prepared baking sheets. Carefully spread, using the back of a spoon, to form discs about 4 cm in diameter.

Step 4.

Sprinkle over your choice of toppings before leaving to set.
